From its wild herbarium, nature offers fruits and plants containing an abundance of vitamins, minerals, enzymes, fibres and microscopic substances with therapeutic properties. The same products of nature that have nourished our ancestors for thousands of years are shown to be rich sources of nutrition containing everything necessary for our sustenance.

Every day our bodily organism is attacked by renegade, degenerate molecules, appearing spontaneously within the body. Those molecules, missing an electron, are called “free radicals” by scientists. As these free radicals circulate within our organism, trying to balance or repair their own deterioration, they in turn affect healthy molecules. This leads to a growing degeneration of molecules, inducing cellular mutations, thus causing a diseased condition in the organism.

These harmful elements increase due to the presence of pollution, pesticides, preservatives and other artificial food additives in our bodies. The list of toxic elements that our body absorbs every day is a long one. Other contributing factors are environmental influences, bad habits and unregulated lifestyles. It is important to check the onslaughts of the free radicals, which are the origin of cancer, cardio-vascular diseases and other serious disturbances.

Within wild fruits and vegetables and those cultivated by organic methods, there exist a great number of substances beneficial for the body. Acting with meticulous precision, the laws of nature anticipate the threat and causes of disease, by endowing certain foods with life-saving properties known as "antioxidants".

Since the Second World War, the risk of famine in Europe and other developed countries no longer exists. Paradoxically, researchers have told us that a number of new diseases are caused by or aggravated by the food consumed by the people of these developed countries.

Despite an abundant supply of food, large numbers of people suffer from malnutrition, due to an inadequate, imbalanced diet. This may be partly due to excess, but mostly it is caused by a lack of knowledge of proper nutrition and healthy eating practices. The quality of food, its freshness and sustaining life force is the most importance consideration, rather than the bulk of food that is consumed. Therefore the gifts of nature’s wild garden, and those foods produced organically, without the use of pesticides and synthetic fertilizers, are what nourish us in our health and existence.

You will find in my book 'The art of cooking with wild plants' 130 wild plants and 250 receipes, some articles on their dietetic and medical values and some advices on how to collect the herbs.
